It begins with the fruit

It all starts in the orchard. Fruit grows, develops its colour and ripens. Our photographs show peaches and plums on the trees. The ripeness, flavour and condition of fresh fruit influence the dried product.

From harvest to preparation

Dried-fruit production typically starts with selecting and preparing the harvest. Suitable fruit is sorted and cleaned. Depending on the variety and intended product, it may be pitted, peeled, halved or sliced. The steps differ from one fruit to another.

Sun drying and drying equipment

At MANNA, we use both methods: sun drying and drying equipment. Both remove water from the fruit. Its flavour becomes concentrated, its volume decreases and its texture changes. Equipment allows more control over drying conditions; sun drying depends more on conditions outdoors.

After drying

Assessing the drying result and choosing appropriate storage are also part of production. Fruit needs to cool sufficiently before packing. Suitable packaging protects it from moisture and outside influences. Processing and storage depend on the fruit and product.

Variety on the table

Our photographs bring together orange dried fruits, dark plums and pale pears. They invite you to try and share. Enjoy a small serving with tea, take some along for the day or chop them into breakfast and baking. Dried tomatoes add a savoury side to the selection.
